Morning Glory Muffins

Compliments of The Brew Creek Centre & Veracis Annual Spring Retreat 

  • 2 cups unbleached wheat flour
  • 1 1/4 cups raw cane sugar
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 cup melted butter or canola oil
  • 2 tsp vanilla
  • 2 cups grated zucchini or carrots
  • 1 cup peeled and grated apple
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
  • 1/2 cup unsweetened coarse coconut

 

Preheat oven to 350°

In a large bowl combine flour, baking soda, cinnamon and salt.

In a separate bowl beat together eggs, sugar, melted butter (or canola oil) and vanilla until light & fluffy.

Stir wet ingredients into the flour mixture, mixing jut until combined.  Do not over mix or the gluten in the flour will make the muffins tough.

Stir in raisins, nuts, coconut and apple.

Spoon batter into greased muffin cups, filling to the top.

Bake at 350° for 20 minutes.
